Recipe of the Week: Chicken & Apple Gyros

4 Servings

Ingredients:

2 medium apples ( we recommend Honeycrisp, Zestar and/or Ginger Gold)

Juice of 1/2 Lemon

1 tablespoon olive oil

1 medium sweet candy onion, thinly sliced

1 red bell pepper, seeds and ribs removed, and thinly sliced

1-2 jalapeño peppers, seeded, and thinly sliced

2 cooked chicken thighs or chicken breast, thinly sliced (about 2 cups)

Sea salt and pepper

4 pita breads or flour tortillas, heated

Sriracha for serving

Tzatziki Ingredients:

1 cup Greek yogurt

2 garlic cloves, finely minced

1 cucumber, peeled, seeded, and cut into small pieces

2 sprigs of fresh dill

sea salt and pepper

1. In a medium bowl, toss the apple slices with the lemon juice and set aside

2. Heat the oil in a large skillet over medium-high heat. Add the onion, bell pepper, and jalapeños, sauté until the vegetables are lightly cooked, about 5 minutes, or until the chicken is thoroughly heated.

3. To make the tzatziki, stir together the yogurt, garlic, cucumber, and dill in a small bowl. Season with salt and pepper to taste. Refrigerate until ready to serve.

4. Spoon the chicken mixture equally into warm pita pockets or tortillas. Top with the reserved apple pieces and spoonfuls of tzatziki. Serve with Sriracha for extra spice.
